We specialize in Short and Long Term care, Rehab, Sub-acute care, and Alzheimer's Specialty care. Our facility also hosts an Assisted Living Facility, Adult Day Health Center, Senior Transportation and Home Care Services. Responsible for all dietary services of the facility.
Administers and supervises all menu planning, food preparation, staffing of dietary personnel, sanitation of dietary services, and safety and security of dietary.
Assumes responsibility for all inspections of dietary services by various agencies.
Cooperates closely with consulting dietitian on therapeutic diets.
Responsible for making recommendations as to hiring, firing and scheduling.
Provides direct supervision and orientation of dietary personnel or for delegating same to a supervisor.
Responsible for evaluating productivity and work efficiency and proficiency of all department members.
Responsible for departmental records which include requisitioning of food, supplies, and equipment; inventory system; light and heavy cleaning schedules.
Provides input into operational budgets and maintains allocated budgetary costs and department hours.
Responsible for training all dietary personnel. This includes in-service training, training in fire safety and emergency procedures, on-the-job training, and conducting staff meetings.
Responsible for attending all dietary facility committee meetings as required by the Executive Director.
Responsible for quantity, quality, temperature, and appearance of food and for ensuring that meals are served as scheduled. Also responsible for therapeutic diets, substitutions, update of dietary kardex under the direction of the dietitian.
EDUCATION: Ability to speak, read, and write English. Ability to follow written and oral directions. A high school diploma is required, and a Food Service Supervisor Certificate is required under State and Federal guidelines. Must have a Serv Safe Certificate or enroll in and pass an approved Serv Safe Certification Program within a six month period from date of employment.
TRAINING AND EXPERIENCE: Must have at least two years of formal training and two years of experience in food service or, if no formal training, must have five years experience in food service. Must have knowledge of basic principles of dietetics, sanitation, large scale ordering, preparation of food, supervision of staff, and food service techniques.
ESSENTIAL JOB FUNCTIONS: Good physical and mental health. Finger and hand dexterity to handle knives and utensils used in food preparation. Visual and auditory acuity. Lifts and/or carries supplies at a minimum of fifty (50) lbs. Pushes and pulls carts at a minimum of fifty (50) pounds, occasionally. Continuously walks, sits and stands. Turns, crouches, kneels, stoops, bends below waist, and reaches above shoulder height as tasks dictate, including lifting food and kitchen equipment in limited work areas. Ability to perform routine, repetitive tasks in cooperation with other dietary personnel. Able to follow policies and procedures of dietary services and of the facility. Must be dependable, honest, industrious and have a neat personal appearance. Must project a positive attitude towards the service provided.
