Registered Dietitian – Job Description:
The role of the Dietitian is to provide expert advice to facility and staff, to establish and maintain systems that are effective and efficient to operate the dietary department, and provide food service to each resident with a nourishing, palatable, well balanced diet. In a cost-effective, efficient manner to safely meet residents’ needs in compliance with federal, state and local requirements.
Registered Dietitian - Essential Duties and Responsibilities:
Develop or recommend a current diet manual to meet the needs of the residents.
Develop and make recommendations to implement dietary and food service policies and procedures to meet residents needs and in compliance with federal, state and local requirements.
Assist the food service supervisor to determine the personnel requirements for the dietary department and to make recommendations for sufficient staff to implement dietary and food service policies and procedure.
Develop menus to meet residents’ needs.
Assist the food service supervisor to assess residents’ dietary needs and develop appropriate dietary plans in compliance with physician’s orders.
Assist to devise systems to monitor food temperatures, water temperatures and refrigeration temperatures.
Assess and document the nutritional needs and weights of each resident in accordance with the resident comprehensive assessment and care plan.
Review and plan all regular and therapeutic diets and substitutes, diets and nourishing snacks.
Approve all permanent menu substitutions.
Counsel residents regarding dietary likes and dislikes appetite food habits and therapeutic menus.
Assess and document residents’ food allergies and cultural backgrounds that may affect food consumption.
Evaluate and make recommendations regarding the serving time of meals, sanitation and food handling procedures.
Evaluate food based on nutritional adequacy, method of preparation, taste, appearance, and serving temperature and portion size.
Registered Dietitian - Leadership Responsibilities:
Ensure Culinary Services Policy and Procedure manual is current and up-to-date
Mentor team members and all departments on food service best practices
Participate in employee selection, hiring, training and termination for department
Present during emergency situations and/or severe weather, as needed
Qualifications:
Register by the Commission on Dietetic Registration of the American Dietetic Association (RD). Or on the basis of education, training or experience in identification of dietary needs planning and implementation of dietary programs.
Computer literate
Experience in Long Term care dietary related guidelines and requirements preferred.
Must have a genuine interest and desire to work with the senior population
